Banana pecan nut bread has a tangy surprise with the addition of cranberries and a crunch from the pecans. It’s a great recipe to use up older bananas.

INGREDIENTS
2 2/3 cups flour

3 tsp baking powder
1 tsp salt
1/4 tsp baking soda
1/2 cup melted butter
1 cup sugar
3 beaten eggs
1 cup ripened bananas ( about 2 medium)
3/4 cup pecans (chopped to desired consistency)
2 tsp lemon zest (grated)
DIRECTIONS
Grease a loaf tin and line the bottom with parchment paper.
Stir flour, baking power and soda in a bowl. Add the cranberries, orange rind and nuts and mix lightly.
Cream melted butter with sugar until fluffy and beat in eggs one at a time,. Fold in bananas and beat well.
Stir wet ingredients into dry ingredients and mix just until incorporated.
Pour the mixture into the and bake at 325 degrees Fahrenheit for 1 hours 2 minutes.
Note: This recipe is best served after resting once day.
