Banana Pecan Nut Bread

This bread has a tangy surprise with the addition of cranberries and a crunch from the pecans. It’s a great recipe to use up older bananas.

Enjoy the nut bread as dessert or at any time of the day that you need a pick me up. 

2 2/3 cups flour

Cranberries are a tangy surprise in this bread.

3 tsp baking powder

1 tsp salt

1/4 tsp baking soda

1/2 cup melted butter

1 cup sugar

3 beaten eggs

1 cup ripened bananas ( about 2 medium)

3/4 cup pecans (chopped to desired consistency)

2 tsp lemon zest (grated)

Grease loaf tin and line bottom with greased parchment paper.  Stir flour, baking power and soda in a bowl.  Cream melted butter with sugar until fluffy and beat in eggs one at a  time,.  Fold in bananas.  Beat well.  Add cranberries and nuts to flour mixture and mix lightly.

Stir wet ingredients into dry ingredients.  Fold orange rind into mixture and pour the mixture in a pan.  Bake at 325 degrees Fahrenheit for 1 hours 2 minutes.

Note: This recipe is best served after resting once day..
