2 1/2 cups chopped ripe tomatoes

Cinnamon Salsa

3 shallots chopped

1 red or green pepper diced

1 clove of garlic minced

1/4 cup white vinegar

1 tsp dried crushed chilies

1 1/2 tsp salt

1/4 cup brown sugar

1 1/2 tsp paprika

Combine ingredients and boil on medium-high heat until thickened.  Place in hot sterilized jars and seal according to preferred canning method.
