Lemon Bread

1/2 cup almond milk (unsweetened)

2 beaten eggs

1 lemon rind grated

1 cup sugar

1  1/2 cups flour

1/2 tsp salt

1 tsp baking powder

1/2 cup icing sugar

2 tbsp lemon juice

Combine butter, milk, eggs, rind and sugar.  In another bowl mix flour, salt and baking powder.Add dry ingredients to wet ingredients.  Do not over mix.  Bake in a loaf pan at 350 degrees Fahrenheit for 30 to 45 minutes.  Allow cake to cool.

Combine icing sugar and lemon juice to create a glaze for the cake.    Pour glaze over cake and allow to set.  Top with candied lemon peel or candied lemon slices if desired.
