Mini Flat Breads

Serve with tomatoes, cucumbers and goat cheese for a Mediterranean treat.

This recipe takes a couple of hours to complete but it is worth the weight.  The bread is delicious and it is wonderful filled with veggies and cheese.  Try serving this for lunch or a light dinner.

5 tsp yeast

1 tsp honey

1 1/2 cups warm water

1 1/2 tsp salt

3 tbsp oil

3 cups flour

In a bowl mix together yeast, honey, water, and oil.  Add half of the flour mixing until smooth.  Gradually add the rest of the flour until a dough ball forms.  The dough will be sticky.

Allow the dough to rise for at least an hour or until double in size.

Turn out dough onto non stick surface and divide into 10 pieces.  Pat each piece with flour and roll out into disks.  Place on a greased cookie sheet and cook at 400 degrees Fahrenheit for 10 minutes or until golden brown.
