Easy Banana Bread

I like to make smoothies in the morning, but I find at the end of the week there’s always leftover bananas.  I use the fruit to make this moist cake.  It takes wonderful and fills the house with a rich scent as it bakes.

1/3 cup melted butter

Add your favorite nut to the batter.  Walnuts or mixed nuts work well.

1/3 cup brown sugar

1/3 cup white sugar

2 beaten eggs

Mix butter and sugar until creamy.  Add eggs and beat well.

1 3/4 cup flour

1/4 tsp baking soda

2 tbsp baking powder

1/2 cup mixed nuts

Mash 3 medium bananas.  Mix alternatively with flour mixture into wet mixture.  Grease bread pan and bake at 350 degrees Fahrenheit for about 45 minutes or until the center springs back when lightly pressed.
