I like to make smoothies in the morning, but I find at the end of the week there’s always leftover bananas. I use the fruit to make easy banana bread. The bread takes wonderful and fills the house with a rich aroma as it bakes. Try with your favourite cup of tea or coffee.
1/3 cup melted butter
1/3 cup brown sugar
1/3 cup white sugar
2 beaten eggs
Mix butter and sugar until creamy. Add eggs and beat well.
1 3/4 cup flour
1/4 tsp baking soda
2 tbsp baking powder
1/2 cup mixed nuts
Mash 3 medium bananas in a bowl.
Mix flour, baking powder and soda into one bowl.
In another mix butter, brown sugar, sugar and eggs
Fold in dry ingredients into wet ingredients.
Grease a bread pan and bake at 350 degrees Fahrenheit for about 45 minutes or until the centre springs back when lightly pressed.
