Cranberry Orange Loaf

I love when fresh cranberries appear in the store in the fall.  The fruit reminds me of family get togethers where cranberries are traditionally served on the table. 

I like to make cranberry orange loaf for Christmas.  The cranberries and the orange juice pares well together and provides a tart alternative to the sweet treats of the season.


2 cups flour

cranberry orange loaf

2 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup white sugar

3/4 cup orange juice

1 beaten egg

2 tbsp melted butter

1 cup whole cranberries


Mix orange juice, egg, sugar and butter together in a bowl until well blended.

Mix dry ingredients together.

Fold wet ingredients into dry and mix until just incorporated.

Fold in cranberries.

Pour into a greased loaf pan and bake at 350 degrees Fahrenheit for 50 to 60 minutes.
