My favourite jam to use in jam crumble squares is a low sugar peach apricot blend. The jam blends well with the soft texture of the square.
1 cup graham wafers
3/4 cup flour
1/2 cup butter
1/2 cup white sugar
1/2 cup shredded coconut
1 tsp baking powder
Mix the ingredients into a crumble. Pour 3/4 of crumbs into a 8×8 pan and pat down. Cover with jam. I used a double the fruit apricot jam in this example.
Pour the rest of the crumb mixture onto the jam and bake at 375 degrees Fahrenheit for 15 minutes or until golden brown.
Cool completely before cutting into squares
