This recipe is easy to make and is refreshing on a hot summer day.
Blueberries can be replaced with raspberries or strawberries as preferred.
1 1/2 cups cashew milk
1 1/2 cups mashed banana
2/3 cup frozen blueberries.
1 tbsp maple syrup
Blend ingredients in a blender until smooth. Pour the mixture into an ice cream maker and freeze according to instructions. Remove the ice from the ice cream maker and freeze overnight in an air tight container.
To serve remove container from the refrigerator and let stand 10 minutes or until ice becomes less firm.
Note: Cashew milk can be made at home.Soak 4 cups of cashew milk overnight in enough water to cover the nuts with another 1 1/3 cups water. In the morning drain and rinse. Process in a blender with 4 cups of water. Strain the mixture through cheese cloth.
