Helpful Hints

- Soften hardened butter by putting a small warmed bowl over the butter plate.
- Freeze cranberries and lemon peel in ice cube trays to add to drinks at your parties.
- Frozen grapes can also be added to party drinks. They’re great eaten frozen by themselves as well.
- Replace sour cream in dips with cottage cheese that has been zipped in a blender.
- Add vanilla or almond extract to water to flavor coffee as it brews.
- After you cut cheese butter the edge to keep it from drying out.
- Chill the bowl, beaters and cream before whipping.
- When boiling eggs add a teaspoon of vinegar to the water. This prevents cracks in the shell.
- Wet your knife before slicing eggs to prevent the yolk from crumbling.
- Put a dry sponge in the vegetable crisper to absorb excess moisture.

Apple Cake
This is another of my grandmother’s recipes. She used to use Spy apples in the recipe. If you can’t find them a tart apple like Granny Smith apples will work.
1 cup sugar

1/2 cup butter
1 egg
1/2 cup cold coffee.

Unbaked Cookie Squares
The basic syrup for these cookies is boiled on the stove and then stirred into the ingredients. Once chilled this recipe makes a square something like a candy bar.
1/2 cup brown sugar

1/2 cup corn syrup
Bring to a rolling boil. Remove and add
1 cup peanut butter
3 cups corn flakes
Mix together and pour into a greased pan. Melt a bag of chocolate chips in a double boiler or the microwave and pour chocolate over base. Smooth until even and chill for at least an hour.

Traditional Corn Bread
I don’t make cornbread often but when I do I use this recipe. The recipe is packed with flavor and is a crowd pleaser.
1 cup corn meal

1 cup flour
1/4 cup sugar
1/4 tsp salt
4 tsp baking powder
1 egg
1 cup milk
1/4 cup melted butter
Mix wet ingredients into dry. Bake at 375 degrees Fahrenheit until a toothpick inserted in the middle of the bread comes out clean. For muffins this is about 13-15 minutes.
