Chocolate Ice Box Cookies

This recipe is similar to the recipe for Peanut Ice Box Cookies.  The dough can be kept in the refrigerator until you are ready to bake the cookies.  Rich and moist this dough is super chocolatey.  Add it to your lunch box for an afternoon treat.

1 cup melted butter

Use mint chocolate chips as a variation.

2/3 cup brown sugar

1/2 cup light corn syrup

1 beaten egg

1/2 tsp vanilla

Mix together in a large bowl.  In a separate bowl mix together the dry ingredients below.

2 1/2 cups flour

1/2 cup cocoa

1/4 tsp baking soda

1/8 tsp salt

3/4 cup chopped nuts

1/2 cup mini chocolate chips

Incorporate dry ingredients into wet ingredients.   shape into 2 inch diameter rolls and wrap in waxed paper.  Freeze for 2 hours and then cut into thin slices.  Bake at 400 degrees Fahrenheit for 8-10 minutes.

Tip:  Leave these in the freezer and cook as needed.
