Cranberry Sauce Bread with Walnuts

What do you do with leftover cranberry sauce at the holidays?  This is the perfect recipe to use up the leftovers.  A sweet bread with tangy cranberries, this loaf is a perfect marriage of sweet and sour.  It’s great for a snack or for a light dessert.

1 can chunky cranberry sauce

The bread is nice made with a chunky apple sauce instead of the cranberry sauce.

juice of 1 orange

3/4 cup sugar

3 tbsp melted butter

1 egg

1/2 cup almond milk

Mix wet ingredients together

2 1/2 cups flour

4 1/2 tsp baking powder

2/3 cups bran flakes

1/2 tsp salt

1/2 cup walnuts

Mix dry ingredients until powder is well incorporated .  Mix wet ingredients into dry.  bake in a loaf tin at 350 degrees Fahrenheit for 60 to 70 minutes.
