Cranberry Sauce Bread with Walnuts

What do you do with leftover cranberry sauce at the holidays?  Cranberry sauce bread with walnuts is the perfect recipe to use up the leftovers.  A sweet bread with tangy cranberries, this loaf is a perfect marriage of sweet and sour.  It’s great for a snack or for a light dessert.

INGREDIENTS

1 can chunky cranberry sauce

juice of 1 orange

3/4 cup sugar

3 tbsp melted butter

1 egg

1/2 cup almond milk

2 1/2 cups flour

4 1/2 tsp baking powder

2/3 cups bran flakes

1/2 tsp salt

1/2 cup walnuts

DIRECTIONS

Mix flour, baking powder, bran and salt together until well mixed. Fold in walnuts.

Mix cranberry sauce, juice, sugar, almond milk, egg, melted butter and sugar together until well mixed.

Fold wet ingredients into dry ingredients just until mixed.

Bake in a loaf tin at 350 degrees Fahrenheit for 60 to 70 minutes.
