I’ve tried many recipes for gingerbread and I like this one the best.  The ratio of ginger to cinnamon gives a nice bite to the cookie and the texture is pleasing to the mouth. Serve with cocoa or hot coffee.



3 cups flour

2 tsp ground ginger

1 tsp cinnamon

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Blend the above together.

Mix the below ingredients

1/2 cup softened butter

1/3 cup sugar

1/3 cup packed brown sugar

1 egg

1/2 cup molasses

1 tsp vanilla


Mix dry ingredients into wet just until incorporated. 

Chill for at least an hour.  Roll on top of parchment paper and cut out shapes using a variety of cookie cutters.  Place on cookie sheets and bake at 350 degrees for 11-13 minutes. 

Cool and decorate as desired.
