Lemon Cranberry Muffins

Lemon Cranberry Muffins


There’s no reason to go to the local coffee shop for a muffin when you have this recipe.  This muffins have the classic paring of lemon and cranberries together.  They’re tangy yet sweet and are sure to tempt your taste buds.


2 cups flourlemon-cranberry-muffins

1 tbsp baking powder

1/2 tsp salt

1/4 cup melted butter

1/2 cup sugar

2 beaten eggs

1 cup lemon yogurt

2 cups fresh cranberries

1 cup walnuts

Mix dry ingredients in a bowl.  mix remaining ingredients in another bowl.  Combine and mix just until flour is incorporated.  Drop mixture by spoonfuls into greased muffin tins.  Bake at 375 degrees Fahrenheit for 25 minutes or until a toothpick inserted into the muffin comes out clean.
