I make several batches of this cookie at Christmas and their always the first to disappear.
Freezer shortbread are easy to make and delicious. They crisp texture goes well with tea and coffee.
1 3/4 cups flour
1/4 cup cornstarch
1/4 tsp salt
1 cup butter
1/3 cup icing sugar
1 tsp vanilla
Mix dry ingredients. Mix wet ingredients. Add dry ingredients to wet ingredients and mix just until incorporated. Turn mixture out onto parchment paper and form into a log. Freeze for at least 1 hour.
Slice into pieces and space evenly on a cookie sheet. Bake in a 325 degree oven for 15 to 20 minutes or until the bottoms of the cookies are golden.
