I like to use Spy or Granny Smith apples in this recipe.  Slice the apples thinly so that they mix well into the batter.

This is a hearty muffin and is great for breakfast. The tart apples and cinnamon make these muffins a tasty addition to your morning routine. 

Ingredients

1 1/4 cups wheat bran

Toast and serve with butter for a morning snack.

1 1/4 cups flour

3 tsp baking powder

1/2 cup packed brown sugar

2 tsp cinnamon

1/2 cup chopped pecans

3/4 cup milk

1 tbsp lemon juice

3 eggs whites (beaten)

1/4 cup oil

2 cups chopped apples

Combine dry ingredients and wet ingredients separately.  Fold wet ingredients into dry.  Spoon into a greased muffin pan and bake at 400 degrees Fahrenheit for 20 minutes.
