Banana Cookies

This recipe gives the taste of banana bread in a cookie.  They’re wonderful in a lunch box or for a quick snack in the mid afternoon.

Ingredients

1 1/4 cups flour

Add walnuts or pecans for a crunch.

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup melted butter

1 cup sugar

2 beaten eggs

1 tsp vanilla

1 1/2 cups mashed bananas

3 cups rolled oats

Combine flour, baking powder, oats  and salt in a large bowl.  In another bowl combine the rest of the ingredients.  Add dry ingredients to wet ingredients and mix just until incorporated.  Bake at 350 degrees Fahrenheit for 12 to 15 minutes.

Store in the refrigerator.
