Peanut Butter Muffins

These muffins are great for a snack when the kids get home from school.    Bake up a double batch as they’re sure to disappear fast.

Ingredients

1 cup flour

Try almond butter instead of peanut butter in this recipe

1 cup oat bran

2 tsp baking powder

1/4 tsp baking soda

1 tsp salt

1/3 cup brown sugar

1 tsp dry milk

1 cup almond milk

1/2 cup peanut butter

2 tbsp melted butter

2 beaten egg whites

Combine all ingredients up to and including the dry milk into a bowl

In a separate bowl combine all wet ingredients. Fold in egg whites just until the mixture comes together.

Mix wet ingredients into dry ingredients.  Spoon batter into muffin cups and cook at 400 degrees Fahrenheit for 25 to 30 minutes.
