Pumpkin Spice Cake

This recipe uses canned pumpkin and a mixture of fragrant spices.  It’s good served with cream cheese icing and is a festive addition to your fall table.



1 cup pumpkin

Pumpkin Spice Cake

1/2 cup melted butter

2 beaten eggs

1 cup sugar

1 tsp vanilla

2 tbsp molasses

3/4 cup almond milk

2 1/4 cups flour

1/4 tsp nutmeg

1/4 tsp ginger

1 tsp cinnamon

2 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt


Mix pumpkin, sugar, eggs, vanilla, molasses and almond milk together in a bowl until well incorporated.

Sift remaining ingredients together in a bowl.

Fold wet ingredients into dry until just incorporated.

Pour into a large greased pan.

Bake at 375 degrees for 30 – 35 minutes or until a toothpick inserted in the cake comes out clean.
