Lime Cookies

These zesty cookies are good during the summer months with a glass of limeade.

Ingredients

Dry Ingredientslime-cookies

2 3/4 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Wet ingredients

3/4 cup butter

1 cup sugar

2 eggs

2 tbsp lime juice

1 tsp green food coloring

Icing

3/4 cup icing sugar

2 tbsp lime juice

Mix together dry ingredients.

Cream butter and sugar.  Add eggs, lime juice and food coloring to wet mixture.  Blend well.

Add dry ingredients to wet ingredients and blend just until the batter is mixed.  In parchment paper roll dough into a cylinder. Chill overnight in the refrigerator.

The next day remove the dough from refrigerator and cut in 1/4 inch slices. Place on a greased cookie sheet and bBake in 350 degree Fahrenheit oven for 12-14 minutes.

Cool.  Prepare glaze and drizzle over top of cookies.  Let set until glaze hardens.
