A traditional oatmeal cookie recipe. Good on its own or tasty with dried fruit and nuts.
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3/4 cup melted butter
1/3 cup sugar
2/3 cup packed brown sugar
2 tsp vanilla
2 1/2 cups rolled oats
1/2 cup of a mixture of nuts, seeds and dried fruit.
Mix dry ingredients in a bowl.
Mix wet ingredients in another bowl.
Incorporate dry ingredients into wet and mix just until blended.
Place the mixture in the refrigerator for at least an hour.
Bake in a preheated oven at 350 degrees Fahrenheit for 15 to 20 minutes.
Drop mixture by spoonfuls onto a cookie sheet and cook for 10 to 12 minutes.
