Sunflower cake muffins are sweet with a satisfying crunch. Their great with coffee or milk and freeze well. Make an extra batch when your baking for when guests drop by. They’ll love them.
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 cup melted butter
1/2 cup sugar
1 beaten egg
3/4 cup almond milk
1/2 tsp vanilla
1/4 cup shelled sunflower seeds
Mix flour baking powder, sunflower seeds and salt together in a bowl.
In another bowl combine the rest of the ingredients.
Fold dry ingredients into wet ingredients.
Turn into lined muffin pans.
1/2 cup brown sugar
2 tbsp four
1 tsp cinnamon
4 tbsp shelled sunflower seeds
Drop 1 tbsp of mixture onto each muffin top.
Bake muffins in a 400 degree Fahrenheit oven for 20 minutes.
