Cornmeal adds a wonderful texture to this shortbread like cookie. Cornmeal cookies simple to make and delectable.
1 cup flour
2/3 cup yellow cornmeal
1 tsp salt
3/4 cup melted butter
1 tsp vanilla
3/4 cup icing sugar
Mix flour, cornmeal and salt in a bowl.
Combine the rest of the ingredients in a bowl until well combined.
Fold dry ingredients into wet and blend just until incorporated.
Roll dough into a log and roll in parchment paper.
Chill for at least an hour. Remove from fridge and slice wedges from log.
Cook on a cookie sheet for 25 minutes at 325 degrees Fahrenheit.
