1 cup cooked bulgur

Bulgur Salad

1/2 cup sliced almonds

2 cups chunked cucumber

1 cup chunked tomato

1/2 cup diced red onion

1/2 cup crumbled feta

1/4 olive oil

3 tbsp balsamic vinegar

1 tbsp dried rosemary

1/2 tsp lemon pepper

Mix bulgur, cucumber, tomato, onion and most of the feta in a bowl.  Whisk olive oil, vinegar, rosemary and pepper into a dressing.  Mix into salad.   Top with remaining feta.
