Spice Cake

Spice cake uses warm fall spices to create an unforgettably moist cake. Add raisins or other dried fruit to enhance the flavour.

INGREDIENTS

1/3 cup butter

1 cup sugar

2 cups flour

1/2 tsp baking soda

2 tsp baking powder

1 tsp cinnamon

1/2 tsp each of cloves, nutmeg and salt

2/3 cup raisins

1/3 cup chopped nuts

2 eggs

1 cup sour milk

DIRECTIONS

Mix butter, sugar, eggs, and sour milk together.

Mix dry ingredients together in a separate bowl. Fold in nuts.

Fold wet ingredients into dry and mix just until incorporated.

Transfer to a loaf pan or layer pans.   Bake in  a 375 degree Fahrenheit oven until a toothpick comes out clean.  Depending upon the size of the pan this could be 30 – 45 minutes.
