Molasses cupcakes are rich and sweet. They’re great for a mid morning snack or for a snack attack at night. Make an extra batch and freeze them for when you need a sweet treat.
1/3 cup butter
1/2 cup sugar
1/3 cup molasses
1/2 cup almond milk
1 1/4 cup flour
1/2 tsp salt
1/2 tsp baking soda
2 tsp cinnamon
1 tsp ginger
Mix butter, sugar, eggs, molasses and milk together until well incorporated.
Mix dry ingredients and fold in to wet just until blended.
Spoon into greased cupcake tins.
Bake in a 350 degree Fahrenheit oven for 20 to 25 minutes or until a skewer inserted in a cupcake comes out clean.
