1/3 cup butter
1/2 cup sugar
1 egg
1/3 cup molasses
1/2 cup almond milk
1 1/4 cup flour
1/2 tsp salt
1/2 tsp baking soda
2 tsp cinnamon
1 tsp ginger
Mix wet ingredients until well incorporated. Add dry ingredients. Bake in a 350 degree Fahrenheit oven for 20 to 25 minutes or until a skewer inserted in a muffin comes out clean.
