You know that the warmer days of spring are here when asparagus appears in the grocery store. Crunchy and sweet, this salad is good for lunch or for a light supper. Serve with garlic toast to complete the meal.

1 lbs asparagus cut into inch pieces
3 cups halved cherry tomatoes
1 cup sliced red onion
1/2 cup feta cheese
1/2 tsp pepper
Cut off woody ends of asparagus. Steam asparagus and set aside until cool. Toss with onions, tomatoes and onion, Top with feta cheese and dressing (recipe below).
1/4 cup lemon juice

3/4 cup olive oil
1 tsp parsley flakes
1 tbsp balsamic vinegar
1 1/2 tbsp Stevia
