Chocolate delight cake is vegan friendly and is great for dessert.  Impress your guests today. 

Crust

1 1/2 cups cookie crumbsChocolate Delight

2 tbsp Stevia

1/4 cup melted vegan butter

Mix ingredients until butter is well incorporated.  Pour mixture into an oiled spring-form pan. Bake at 350 degree Fahrenheit for 10 minutes.

Filling

8 oz non-dairy cream cheese

1 cup soft tofu

1 1/2 cups stevia

Mix in mixer until creamy.

1 tsp vanilla

1/4 cup cocoa powder

Chocolate Delight1/4 cup  almond milk

1/2 tsp salt

Mix ingredients into tofu mixture. Beat until creamy and fluffy.

Pour into spring-form pan and bake for 60 minutes.  Chill.  When cool serve with raspberries and pepitas.
