Zucchini muffins

Zucchini Muffins


These muffins are fresh and tasty.  Make several batches when zucchini is in season and freeze for later.

IngredientsZucchini muffins

2 cups flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1 tsp salt

1 egg

1/4 cup oil

1 1/2 cups grated zucchini

1/2 cup almond milk


Mix dry ingredients into a bowl.  Pour wet ingredients in and stir just until incorporated.  Fill muffin tins and bake at 400 degrees Fahrenheit for 23-25 minutes.
