Chunky Tomato Soup


Hot and hearty this recipe is good for those rainy spring days.  In the summer use fresh romano or beefstake tomatoes for a sweeter taste.


4 cups mixed cherry tomatoes (halved)

1 tbsp olive oilChunky Tomato Soup

2 onions (diced)

1 tsp garlic paste

1/8 tsp cinnamon

10 stalks of thyme

2 cups veggie broth

1 tbsp balsamic

1 tsp salt

1/2 tsp pepper

Saute onion and garlic in a pan until the onions are golden and tender.  Add tomatoes, and cinnamon to the pan.

Saute  for 5-7 minutes.

Add the rest of the ingredients and simmer for 20 minutes.

Serve hot with Herb Bread.
