Strawberry Pie is sweet and full of fresh picked berries.  It is the perfect summer dessert.  Serve with whipped cream, coconut cream, or chocolate shavings for added indulgence.  

Ingredients

Crust

1 1/4 cup cookie crumbsStrawberry Pie

1/4 cup melted butter

In a bowl mix ingredients together until well combined.  Fold into a pie pan and mold to edges of pan.  Cool in refrigerator

Filling

1 cup water

3 drops red food coloring

1 1/2 quarts fresh strawberries

2 tbsp cold water

2 tbsp cornstarch

Bring sugar, water and coloring to a boil.  Mix cornstarch and cold water until blended.  Add to sugar mixture and cook until transparent (about 15 minutes).  Add 1/2 of the berries to the thickened mixture and cool slightly.

Place remaining 1/2 of berries in the pie shell.  Pour cooked mixture over. Refrigerate until cool and butter has solidified in the crust.  Garnish with whipped cream if desired.

Note: The cookie crumb crust can be replaced with a basic pie crust.
