Lentil Stew


Lentil Stew is hot and hearty and is ideal for a chilly day at any time of the year.   The recipe is vegan friendly but will be enjoyed by all.


1 cup dry lentilsLentil Stew

2 cups water

1 medium clove garlic

1 tsp salt

1 chopped onion

1 can crushed tomatoes

3/4 can water

3 chopped potatoes

1 cup chopped carrots

1 cup fresh herbs (parsley, oregano, rosemary – your choice)

Combine lentils, water, salt. and garlic in a pan and bring to a boil. Reduce heat and simmer 30 minutes.

Add tomatoes, potatoes, carrots and herbs.  Cover and simmer 20 to 30 minutes until carrots are tender.

Serve with Bread Machine Herb Bread.
