Maple Muffins and sweet and nutty. There great for a mid-morning snack or packed for a picnic. Try substituting the walnuts for other nuts.
1 1/2 cups flour
1 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/3 cup maple syrup
2/3 cup almond milk
1/4 cup vegan margarine or butter
1 egg or vegan egg substitute for 1 egg
1 tsp maple extract
1 cup chopped walnuts, pecans or almonds.
Mix dry ingredients together. Mix in nuts.
Mix wet ingredients together. Incorporate into dry ingredients. Spoon into lined muffin tins and bake at 375 degrees for 30 minutes.
Note: Before baking the muffins may be topped with candied nuts or cinnamon sugar and nuts.
