Sesame Stir Fry


Sesame stir-fry is a healthy and easy dinner to prepare for week nights.  Serve with rice or couscous and you have a complete meal.

Stir Fry SauceSesame Stir-Fry Sauce

1/2 cup veggie stock

4 tbsp honey

2 tbsp soy sauce

2 tbsp sesame oil

1 tbsp lime juice

1/2 cup sesame seeds

1 tsp ginger

2 tbsp of cornstarch dissolved in 2 tbsp of water

Mix above ingredients together.  Heat in microwave or over the oven until thickened.  Set aside.

Veggie mixture for stir fry

Sesame Stir-Fry1 lb asparagus cut into 1 inch pieces

2 small sliced zucchinis

1 orange bell pepper cut into slices

1/4 cup shredded carrot

1/4 cup mushrooms cut into slices

1 sliced onion

1 cup shelled peanuts

Stir fry veggies and peanuts.  Just before removing from the stove stir in sesame sauce and heat until warm.

Serve with couscous or rice.
