Blueberry Pie


This blueberry pie recipe is based on traditional pies you get in corner cafes.  My grandmother used to make something similar.  For a richer taste use wild blueberries when in season.


7 cups blueberriesBlueberry Pie

1 1/2 cups sugar

1/4 cup cornstarch

1 tsp salt

3 tbsp lemon juice

1 tsp cinnamon

1 pie crust.  I used basic pie crust recipe.

Mix cornstarch with a little water just until the mixture is incorporated well.  Place all ingredients in a pan on the stove and on medium heat stir until the mixture thickens.

Egg wash pre-formed pie shell.  Pour blueberry mixture into shell and bake at 350 degrees Fahrenheit for 35 minutes.
