Apricot Muffin


Apricot muffins are an unusual treat.  Made with fresh apricots and cinnamon topping the recipe is sure to become one of your favorites.  Servie with Strawberry Lemonade


1/3 cup honeyApricot Muffin

2 eggs

1/2 cup Greek yogurt

1/2 cup melted butter

1 cup flour

2 tsp baking powder

1/2 tsp salt

1 cup apricot slices (apricot is peeled, sliced and pitted)

Mix all ingredients together and pour into a lined muffin tin.

Mix 1/3 cup flour, 1/4 cup sugar, 1 tsp cinnamon and 1/4 cup of melted butter together.  Crumble onto top of muffins.

Bake at 350 for 35 minutes or until a skewer pierced into the muffin comes out clean.
