Shortbread has always been a favourite cookie in my household. On holidays we used to make a platter of different types of the sweet treat. Below I’ve included some cookie recipes that were always hits on our holiday platter.

Recipes are ordered from left to right.
Chocolate Chip Brown Sugar Shortbread
1/2 cup brown sugar
1/2 cup white sugar
1 cup butter
1 1/2 cups flour
1/2 cup chocolate chips.

Lime Shortbread
1/2 cup white sugar
3/4 cups butter
1 1/2 tbsp lime juice
1 1/2 cup four
lime zest

Almond Shortbread
1/2 cup white sugar
1/2 cup ground almonds
1 cup biitter
1 1/2 cups flour
1/2 cup slivered almonds.

Cranberry/Pomegranate Shortbread
1/2 cups white sugar
3/4 cups butter
2 tbsp pomegranate juice
1 1/2 cups flour
1/4 cup dried cranberries
Caraway Shortbread (Not pictured)
1/2 cup white sugar
1 cup butter
1 1/2 cups flour
1 tsp of caraway seeds
Preparation Instructions
Mix sugar and softened butter together.until smooth Mix in liquid ingredients like lime juice, zest and pomegranate juice just until blended.
Combine flour and remaining ingredients into the batter. Do not overwork.
Roll dough in logs in parchment paper and put in the fridge overnight or at least until the butter hardens.
Slice and cook at 375 degrees Fahrenheit until the undersides of the cookies are golden brown..
