At this time of year I like to take picnics out and explore my home town. It’s great to have something sweet to finish off the meal. Peanut Chip bars are sweet and nutty and filled with chocolate chips. Their soft and moist but firm enough that they won’t disintegrate in your picnic basket.
For a change try using butterscotch chips in place of the chocolate.
1 1/4 cups all purpose flour
1/4 tsp baking powder
1 tsp cinnamon
1/2 cup butter
1/2 cup peanut butter
2/3 cup packed brown sugar
1 tsp vanilla
1 cup chopped salted peanuts
1 package chocolate chips
In small bowl cream butter, peanut butter, brown sugar and beat until light.
Beat in egg and vanilla.
Stir in dry ingredients, 1/2 cup peanuts and 1/2 cup chocolate chips.
Put mixture in 13×9 pan.
Sprinkle with remaining peanuts and chips pressing them lightly itno the dough.
Bake at 325 degrees Fahrenheit for 20 to 25 minutes until golden brown.
Cool and cut into bars.
