Occasionally my mother would make date squares when I was a child. I never really liked them then but I have learned to love them as an adult. Filled with oatmeal and sweet dates the squares are filling and tasty at the same time. Try one as a mid afternoon snack to get you through the day.
INGREDIENTS
2 cups flour
2 cups oatmeal
1 cup butter
1 cup sugar
1 tsp baking soda
1/2 tsp cream of tartar
1 lb dates
water
2 tbsp flour
2 tbsp sugar
DIRECTIONS
Filling – Boil pitted dates with some water, a little sugar and flour until dates are re-hydrated and soft. Mash with a potato masher.
Crumbs – Mix flour, oatmeal, butter, sugar, baking soda, and cream of tartar together until crumbly.
In a greased pan place 1/2 of the crumbs.
Spoon filling on top.
Cover with remaining crumbs and bake at 375 degrees Fahrenheit for 20 minutes or until golden brown.
