Lemon loaf is a sweet cake drizzled in a tangy icing. It’s easily frozen for when you have unexpected guests drop by. Serve with your favourite tea or coffee.
1/2 cup shortening
1 lemon rind
2 well beaten eggs
1 tsp baking powder
1 cup sugar
1/2 cup milk
1 1/2 cups flour
1/2 tsp salt
Cream butter and sugar together.
Add eggs to butter mixture and beat until fluffy.
Mix together dry ingredients.
Add milk and dry ingredients alternately to egg mixture.
Bake in a greased loaf pan for 1 hour at 350 degrees Fahrenheit.
When finished baking pour lemon juice and 1/4 cup icing sugar over the cake to make a thick icing.
