The tang in lime cookies comes from frozen lime concentrate. Keep a can on hand for when you want a simple and unusual cookie for the kids.
3/4 cup melted butter
1 cup white sugar
1/2 can frozen lime concentrate
1 beaten egg
1 tsp baking soda
1/4 tsp salt
2 cups flour
1 cup pecans
Mix butter, sugar, lime concentrate and beaten egg together.
Mix dry ingredients together and then blend into wet ingredients.
Chill batter until the mixture stiffens up and then spoon mixture by spoonfuls onto a baking sheet.
Bake at 350 degrees Fahrenheit for 12-14 minutes or until golden.
