Old fashioned banana muffins are great for using up the ripe fruit before it spoils. The recipe is light, sweet and fluffy and is good with coffee or tea. For a special treat try adding chocolate or butterscotch chips to the batter.
1/2 cup vegan margarine
3/4 cup sugar
1 beaten egg
1 cup mashed bananas
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla
1/2 tsp salt
In a large bowl cream margarine, and sugar together until fluffy. Mix in beaten egg, vanilla and mashed bananas.
In another bowl mix together flour, baking powder, baking soda, and salt.
Add dry ingredients to wet ingredients and mix until just incorporated.
Drop by spoonfuls into a greased muffin tin and bake at 350 degrees Fahrenheit for 20 to 25 minutes or until golden brown.
