Crystallized Ginger Cookies

This cookie has a bold flavor. The crystallized ginger  spices up the flavor of the molasses and brown sugar. 

If you don’t like crystallized ginger it can be left out easily.  The ginger cookie itself has a good flavor.


3 1/4 cups flour

Crystallized Ginger Cookies1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/4 tsp ginger

1/4 tsp allspice

1/4 tsp salt

1/4 cup chopped crystallized ginger

1/2 cup melted butter

3/4 cup packed brown sugar

3/4 cup molasses

2 beaten eggs

1 tsp vanilla

slices crystallized ginger

Mix together flour, baking powder, soda, cinnamon, ginger, allspice, salt and crystallized ginger in a large bowl.

In a separate bowl mix wet ingredients.

Incorporate wet ingredients into dry until well mixed.

Drop by teaspoonfuls onto a cookie sheet.  Top with more slices of crystallized ginger.

Cook at 350 degrees Fahrenheit for 12 to 14 minutes.
