Luscious lemon bread has a subtle lemon flavor which comes from the lemon zest. The glaze amps up the flavor.

1/4 cup butter
1/2 cup almond milk (unsweetened)
2 beaten eggs
1 lemon rind grated
1 cup sugar
1 1/2 cups flour
1/2 tsp salt
1 tsp baking powder
1/2 cup icing sugar
2 tbsp lemon juice
Combine butter, milk, eggs, rind and sugar.
In another bowl mix flour, salt and baking powder.
Add dry ingredients to wet ingredients and mix until just blended. Do not over mix.
Bake in a greased loaf pan at 350 degrees Fahrenheit for 30 to 45 minutes. Allow cake to cool.
Combine icing sugar and lemon juice to create a glaze for the cake. Pour glaze over cake and allow to set. Top with candied lemon peel or candied lemon slices if desired.
