Christmas chip cookies use rainbow Christmas chips for a unique flavour. They’re a little sweeter than your average chocolate chip cookie and the dough is soft and tender. They’re great with hot cocoa or cider.
3 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
2/3 cup veggie shortening
1/2 cup salted butter
1/2 cup sugar
1/2 cup packed brown sugar
1 tbsp vanilla
2 1/2 cups rainbow Christmas chips
1 cup chopped walnuts
Cream butter, shortening, sugar, brown sugar, eggs and vanilla together until well combined.
In another bowl mix flour, baking powder, baking soda and salt.
Add dry ingredients to wet ingredients and mix until just combined. Fold in rainbow chips and walnuts.
Drop by spoonfuls onto a greased cookie sheet.
Bake in a 350 degree Fahrenheit oven for 12-15 minutes or until golden.
