Pumpkin Cinnamon muffins are fresh and fragrant. When baking they fill the room with the scents of the holidays. For a special treat walnuts can be added to the batter.
INGREDIENTS
2 cups pumpkin
2 cups sugar
1 cup oil
4 eggs beaten
1 cup wheat bran
2 cups flour
1/2 tsp salt
2 tsp baking soda
2tsp baking powder
3 tsp cinnamon
DIRECTIONS
Mix pumpkin, sugar, oil, and beaten eggs in a bowl until well incorporated.
In a separate bowl mix wheat bran, flour, salt, baking soda, baking powder and cinnamon.
Add dry ingredients to wet and mix until just combined.
Bake at 350 degrees Fahrenheit for about 25 minutes. ( A toothpick should come out clean when inserted into the muffins.)
