Vegetarian Chili with Mushrooms

When the cold weather appears I long for comfort food.  Vegetarian chili with mushrooms is one of my favourite recipes to make on a frosty day.  The recipe is quick, easy and flavourful.  Enjoy!

INGREDIENTS

2 small chopped onionsvegetarian chili with mushrooms

1 chopped red pepper

1 chopped stalk celery

Olive oil to cover the bottom of a stock pot

Baked Apples

My favourite apples are Spies.  I like them in pies, crisp and just on their own.  Occasionally, when I want to sweeten up the fruit I make this recipe of baked apples. Their sweet but tangy at the same time.  Serve with coconut or whipped cream for an extra special treat.

Morning Granola

I don’t often eat cereal for breakfast but when I do I tend to eat granola.  This granola recipe includes coconut oil, honey and dried apricots.  For a surprise cocoa nibs are added for a chocolatey kick.  Enjoy morning granola for breakfast or on top of your favourite crumble.

Lemon Cranberry Muffins

There’s no reason to go to the local coffee shop for a muffin when you have this recipe.  This muffins have the classic paring of lemon and cranberries together.  They’re tangy yet sweet and are sure to tempt your taste buds.
