Blueberry banana ice is a refreshing frozen dessert great for any time of year. Try replacing the blueberries with raspberries or strawberries for another treat.
1 1/2 cups cashew milk
1 1/2 cups mashed banana
2/3 cup frozen blueberries.
1 tbsp maple syrup
Blend ingredients in a blender until smooth. Pour the mixture into an ice cream maker and freeze according to instructions.
To serve remove container from the refrigerator and let stand 10 minutes or until ice becomes less firm.
NOTE: To make cashew milk at home soak 4 cups of cashews overnight in enough water to cover the nuts with another 1 1/3 cups water. In the morning drain and rinse. Process in a blender with 4 cups of water. Strain the mixture through cheese cloth.
