Lemon Cringles are light and fluffy with the tang of lemon and the sweetness of powdered sugar. The batter can be tinted different colours depending upon the season. Serve with tea or coffee.
1/2 cup melted butter
3/4 cup sugar
2 tbsp lemon juice
10 drops neon pink food colouring
2 1/4 cups flour
2 tsp baking powder
Melt butter in an oven proof bowl. Beat in sugar and eggs. Fold in lemon juice and food colouring.
In a separate bowl mix flour and baking powder until baking powder is thoroughly incorporated.
Add dry ingredients into wet ingredients.
Chill over night.
Roll into balls and coat with icing sugar.
Bake in a 350 degree Fahrenheit oven for 10 to 15 minutes.
