Carrot Bread

Carrot Bread is great on an Easter platter.  It’s sweet and filling and easy to make.  Serve with lemon icing or a traditional cream cheese icing.



1 cup grated carrot

Carrot Bread3/4 cup maple syrup

1/2 cup oil

2 eggs (beaten)

1 tsp vanilla

1 1/2 cups flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

nuts if desired


Mix carrots, maple syrup, oil, eggs and vanilla together in a large bowl.

Sift dry ingredients together until well incorporated.

Fold wet ingredients into dry ingredients and blend just until mixed.

Bake at 350 degrees Fahrenheit  for 50 minutes or until a toothpick inserted in bread comes out clean.

Serve with your favourite icing.
