Molasses Refrigerator Cookies can be kept in the refrigerator for several days until you are ready to bake them. Serve with a hot cup of tea or coffee.
2 3/4 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2/3 cup salted butter
3/4 cup packed brown sugar
1/2 cup molasses
1 tsp ginger
1 tsp vanilla
Sift flour, baking powder, baking soda, salt and ginger together.
In another bowl mix melted butter, brown sugar, egg, molasses and vanilla.
Add dry ingredients to wet ingredients and mix until just incorporated.
In parchment form the dough into a log. Chill in the refrigerator over night.
Slice into slices and put on a cookie sheet. Bake in a 350 degree Fahrenheit oven for 10 to 12 minutes.
